Classic Vegan Lentil Sloppy Joes

Ingredients

  • 1 cup Dry Green Lentils
  • 3 tbsp Tomato Paste
  • 3 tbsp Ketchup
  • 1 whole Yellow Onion
  • 1 whole Green Bell Pepper
  • 3 cloves Garlic
  • 1 tbsp Soy Sauce
  • 1 tbsp Apple Cider Vinegar
  • 1 tbsp Maple Syrup
  • 1 tsp Chili Powder
  • 1 tsp Smoked Paprika
  • 2 cups Vegetable Broth
  • 1 tbsp Olive Oil
  • 4 whole Hamburger Buns

Instructions

  1. Heat olive oil in a pot over medium heat. Sauté onion and bell pepper 5 minutes. Add garlic, stir 30 seconds.
  2. Add lentils and vegetable broth. Bring to a boil, reduce heat, and simmer 18–20 minutes until lentils are tender and liquid is mostly absorbed.
  3. Stir in tomato paste, ketchup, soy sauce, apple cider vinegar, maple syrup, chili powder, and smoked paprika. Cook 3–5 minutes until thick and saucy. Season with salt to taste.
  4. Pile the sloppy joe filling onto toasted buns.
