
Classic Vegan Lentil Sloppy Joes

Ingredients
- 1 cup Dry Green Lentils
- 3 tbsp Tomato Paste
- 3 tbsp Ketchup
- 1 whole Yellow Onion
- 1 whole Green Bell Pepper
- 3 cloves Garlic
- 1 tbsp Soy Sauce
- 1 tbsp Apple Cider Vinegar
- 1 tbsp Maple Syrup
- 1 tsp Chili Powder
- 1 tsp Smoked Paprika
- 2 cups Vegetable Broth
- 1 tbsp Olive Oil
- 4 whole Hamburger Buns
Instructions
- Heat olive oil in a pot over medium heat. Sauté onion and bell pepper 5 minutes. Add garlic, stir 30 seconds.
- Add lentils and vegetable broth. Bring to a boil, reduce heat, and simmer 18–20 minutes until lentils are tender and liquid is mostly absorbed.
- Stir in tomato paste, ketchup, soy sauce, apple cider vinegar, maple syrup, chili powder, and smoked paprika. Cook 3–5 minutes until thick and saucy. Season with salt to taste.
- Pile the sloppy joe filling onto toasted buns.
