Vegan Meatball Marinara Subs

Baked lentil-mushroom meatballs in a rich marinara sauce stuffed into toasted sub rolls. A hearty plant-based Italian-American sub sandwich.

Ingredients

  • 1 can (15 oz) Brown Lentils
  • 8 oz Cremini Mushrooms
  • ½ cup Old-fashioned Oats
  • 1 tbsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 2 tbsp Soy Sauce
  • 2 cups Marinara Sauce
  • 4 whole Sub Rolls
  • 1 tbsp Olive Oil
  • ¼ cup Fresh Basil

Instructions

  1. Preheat oven to 400°F. Sauté mushrooms in olive oil 5 minutes until moisture evaporates.
  2. In a large bowl, mash lentils with a fork until mostly broken down. Add mushrooms, oats, Italian seasoning, garlic powder, and soy sauce. Mix well. Season with salt to taste.
  3. Roll into 16 balls. Place on a parchment-lined sheet pan. Bake 18–20 minutes, flipping halfway, until firm and golden.
  4. Warm marinara sauce in a pot. Add the baked meatballs and gently toss to coat.
  5. Toast sub rolls. Fill with meatballs and extra marinara. Top with fresh basil.
