Ingredients

  • 2 cans (15 oz each) Black Beans
  • ½ cup Quinoa
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 cup Frozen Corn Kernels
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • 2 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 2 cups Vegetable Broth
  • 1 tbsp Olive Oil
  • 1 whole Avocado
  • ¼ cup Fresh Cilantro
  • 1 whole Lime

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, chili powder, cumin, and smoked paprika. Stir 1 minute.
  2. Add black beans, quinoa, diced tomatoes, corn, and vegetable broth. Bring to a boil.
  3. Reduce heat and simmer 20 minutes, stirring occasionally, until quinoa is cooked and chili has thickened. Season with salt to taste.
  4. Serve topped with sliced avocado, fresh cilantro, and lime wedges.
