
Smoky Black Bean & Quinoa Chili

Ingredients
- 2 cans (15 oz each) Black Beans
- ½ cup Quinoa
- 1 can (14.5 oz) Diced Tomatoes
- 1 cup Frozen Corn Kernels
- 1 whole Yellow Onion
- 4 cloves Garlic
- 2 tbsp Chili Powder
- 1 tsp Ground Cumin
- 1 tsp Smoked Paprika
- 2 cups Vegetable Broth
- 1 tbsp Olive Oil
- 1 whole Avocado
- ¼ cup Fresh Cilantro
- 1 whole Lime
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, chili powder, cumin, and smoked paprika. Stir 1 minute.
- Add black beans, quinoa, diced tomatoes, corn, and vegetable broth. Bring to a boil.
- Reduce heat and simmer 20 minutes, stirring occasionally, until quinoa is cooked and chili has thickened. Season with salt to taste.
- Serve topped with sliced avocado, fresh cilantro, and lime wedges.
