
Smoky Black Bean Soup with Lime & Avocado

Ingredients
- 2 cans (15 oz each) Black Beans
- 1 whole Yellow Onion
- 1 whole Red Bell Pepper
- 4 cloves Garlic
- 2 cups Vegetable Broth
- 1 can (14.5 oz) Diced Tomatoes
- 1 ½ tsp Ground Cumin
- 1 tsp Smoked Paprika
- 1 tsp Dried Oregano
- 1 tbsp Olive Oil
- 1 whole Lime
- 1 whole Avocado
- ¼ cup Fresh Cilantro
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion and bell pepper 5 minutes until softened. Add garlic, cumin, smoked paprika, and oregano. Stir 1 minute.
- Add black beans, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer 15 minutes.
- Use an immersion blender to partially blend — pulse a few times for a creamy-chunky texture. Stir in lime juice. Season with salt to taste.
- Serve topped with diced avocado, fresh cilantro, and crushed tortilla chips if desired.
