
One-Pot Tomato Basil Orzo
Creamy orzo simmered in a garlicky tomato broth with fresh basil and a hint of red pepper flakes. A beloved one-pot recipe from the Forks Over Knives community.

Ingredients
- 12 oz Orzo Pasta
- 2 cups Cherry Tomatoes
- 3 cups Vegetable Broth
- 2 tbsp Tomato Paste
- 4 cloves Garlic
- ¼ tsp Red Pepper Flakes
- 2 tbsp Olive Oil
- ½ cup Fresh Basil
- 2 tbsp Nutritional Yeast
- 2 cups Baby Spinach
- 1 tbsp Lemon Juice
Instructions
- Heat olive oil in a large pot over medium heat. Add garlic and red pepper flakes, stir 30 seconds. Add tomato paste, stir 1 minute.
- Add vegetable broth, cherry tomatoes, and orzo. Bring to a boil, then reduce heat and simmer 10–12 minutes, stirring frequently, until orzo is tender and liquid is mostly absorbed.
- Stir in baby spinach, nutritional yeast, and lemon juice. Cook 1 minute until spinach wilts.
- Remove from heat. Fold in torn basil. Season with salt and pepper to taste.
