One-Pot Tomato Basil Orzo

Creamy orzo simmered in a garlicky tomato broth with fresh basil and a hint of red pepper flakes. A beloved one-pot recipe from the Forks Over Knives community.

Ingredients

  • 12 oz Orzo Pasta
  • 2 cups Cherry Tomatoes
  • 3 cups Vegetable Broth
  • 2 tbsp Tomato Paste
  • 4 cloves Garlic
  • ¼ tsp Red Pepper Flakes
  • 2 tbsp Olive Oil
  • ½ cup Fresh Basil
  • 2 tbsp Nutritional Yeast
  • 2 cups Baby Spinach
  • 1 tbsp Lemon Juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Add garlic and red pepper flakes, stir 30 seconds. Add tomato paste, stir 1 minute.
  2. Add vegetable broth, cherry tomatoes, and orzo. Bring to a boil, then reduce heat and simmer 10–12 minutes, stirring frequently, until orzo is tender and liquid is mostly absorbed.
  3. Stir in baby spinach, nutritional yeast, and lemon juice. Cook 1 minute until spinach wilts.
  4. Remove from heat. Fold in torn basil. Season with salt and pepper to taste.
