Cold Soba Noodle Salad with Miso-Ginger Dressing

Chilled buckwheat soba noodles with edamame, cucumber, and avocado in a tangy miso-ginger dressing. A refreshing Japanese dinner salad.

Ingredients

  • 8 oz Soba Noodles
  • 1 cup Frozen Shelled Edamame
  • 1 whole English Cucumber
  • 1 whole Avocado
  • 1 cup Shredded Carrots
  • 2 tbsp White Miso Paste
  • 1 tbsp Fresh Ginger
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp Tamari
  • 1 tsp Maple Syrup
  • 1 tbsp Sesame Seeds
  • 3 whole Green Onions

Instructions

  1. Cook soba noodles according to package directions. Drain and rinse under cold water. Cook edamame according to package. Drain.
  2. Whisk miso paste, ginger, rice vinegar, sesame oil, tamari, maple syrup, and 2 tbsp water until smooth.
  3. Toss cold noodles with the dressing. Add edamame, cucumber, carrots, and most of the green onions.
  4. Divide among bowls. Top with sliced avocado, sesame seeds, and remaining green onions.
