
Cold Soba Noodle Salad with Miso-Ginger Dressing
Chilled buckwheat soba noodles with edamame, cucumber, and avocado in a tangy miso-ginger dressing. A refreshing Japanese dinner salad.

Ingredients
- 8 oz Soba Noodles
- 1 cup Frozen Shelled Edamame
- 1 whole English Cucumber
- 1 whole Avocado
- 1 cup Shredded Carrots
- 2 tbsp White Miso Paste
- 1 tbsp Fresh Ginger
- 2 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 1 tbsp Tamari
- 1 tsp Maple Syrup
- 1 tbsp Sesame Seeds
- 3 whole Green Onions
Instructions
- Cook soba noodles according to package directions. Drain and rinse under cold water. Cook edamame according to package. Drain.
- Whisk miso paste, ginger, rice vinegar, sesame oil, tamari, maple syrup, and 2 tbsp water until smooth.
- Toss cold noodles with the dressing. Add edamame, cucumber, carrots, and most of the green onions.
- Divide among bowls. Top with sliced avocado, sesame seeds, and remaining green onions.
