Indian Vegetable Biryani

A fragrant, layered rice dish with spiced mixed vegetables, golden raisins, and toasted cashews. Based on widely published one-pot biryani recipes adapted for 30 minutes.

Ingredients

  • 2 cups Basmati Rice
  • 2 cups Cauliflower
  • 2 whole Carrots
  • 1 cup Frozen Peas
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 2 tsp Garam Masala
  • 1 tsp Ground Turmeric
  • 1 tsp Ground Cumin
  • 3 ½ cups Vegetable Broth
  • 2 tbsp Coconut Oil
  • ¼ cup Golden Raisins
  • ¼ cup Roasted Cashews
  • ¼ cup Fresh Cilantro

Instructions

  1. Heat coconut oil in a large pot over medium heat. Cook sliced onion 6–7 minutes until golden. Add garlic, ginger, garam masala, turmeric, and cumin. Stir 1 minute.
  2. Add cauliflower and carrots. Stir 2 minutes. Add rice and stir 1 minute to toast.
  3. Pour in vegetable broth and golden raisins. Bring to a boil. Reduce heat, cover, and cook 18 minutes.
  4. Fluff with a fork. Fold in frozen peas (they'll warm from the heat). Season with salt to taste.
  5. Serve topped with roasted cashews and fresh cilantro.
