
White Bean and Shaved Cabbage Salad with Orange Dressing
A crisp napa cabbage salad tossed with white beans, dried currants, and a creamy cashew-orange dressing.

Ingredients
- ¼ cup Unsalted Roasted Cashews
- 1 can (15 oz) White Beans
- 4 tbsp Orange Juice
- 1 tbsp Lemon Juice
- 5 cups Napa Cabbage
- ¾ cup Red Onion
- ¼ cup Dried Currants
- 2 whole Orange
- 2 tsp Sesame Seeds
Instructions
- Soak the cashews in very hot water for 15 minutes, then drain and rinse.
- In a blender, combine the soaked cashews, about ¼ cup of the drained white beans, 4 tbsp orange juice, and 1 tbsp lemon juice. Blend until very smooth, adding up to 2 additional tbsp orange juice to reach a drizzleable consistency. Season with salt and pepper to taste.
- In a large bowl, combine the remaining white beans, shaved napa cabbage, red onion, and dried currants.
- Drizzle the cashew-orange dressing over the salad and toss well to coat.
- Top with orange slices and sprinkle with toasted sesame seeds. Serve immediately.
