White Bean and Shaved Cabbage Salad with Orange Dressing

A crisp napa cabbage salad tossed with white beans, dried currants, and a creamy cashew-orange dressing.

Ingredients

  • ¼ cup Unsalted Roasted Cashews
  • 1 can (15 oz) White Beans
  • 4 tbsp Orange Juice
  • 1 tbsp Lemon Juice
  • 5 cups Napa Cabbage
  • ¾ cup Red Onion
  • ¼ cup Dried Currants
  • 2 whole Orange
  • 2 tsp Sesame Seeds

Instructions

  1. Soak the cashews in very hot water for 15 minutes, then drain and rinse.
  2. In a blender, combine the soaked cashews, about ¼ cup of the drained white beans, 4 tbsp orange juice, and 1 tbsp lemon juice. Blend until very smooth, adding up to 2 additional tbsp orange juice to reach a drizzleable consistency. Season with salt and pepper to taste.
  3. In a large bowl, combine the remaining white beans, shaved napa cabbage, red onion, and dried currants.
  4. Drizzle the cashew-orange dressing over the salad and toss well to coat.
  5. Top with orange slices and sprinkle with toasted sesame seeds. Serve immediately.
