Ingredients

  • 2 cans (15 oz each) Butter Beans
  • 1 can (14.5 oz) Crushed Tomatoes
  • ⅓ cup Kalamata Olives
  • 5 cloves Garlic
  • 1 tbsp Fresh Oregano
  • ¼ tsp Red Pepper Flakes
  • 3 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • ¼ cup Fresh Parsley
  • 1 loaf Crusty Bread

Instructions

  1. Preheat oven to 400°F. Heat 2 tbsp olive oil in an oven-safe dish over medium heat. Sauté garlic 1 minute until golden. Add red pepper flakes.
  2. Add crushed tomatoes and olives. Simmer 5 minutes.
  3. Fold in butter beans. Season with salt to taste. Drizzle with remaining olive oil and scatter oregano on top.
  4. Bake 18–20 minutes until sauce is thick and edges are caramelized. Stir in lemon juice. Top with parsley. Serve with crusty bread.
