
Hawaiian Tofu Poke Bowl
Marinated tofu cubes in a soy-sesame-ginger poke sauce over sushi rice with avocado, edamame, cucumber, and crispy wonton strips.

Ingredients
- 1 block Extra-firm Tofu
- 2 cups Sushi Rice
- 3 tbsp Tamari
- 2 tbsp Sesame Oil
- 2 tbsp Rice Vinegar
- 1 tbsp Maple Syrup
- 1 tsp Fresh Ginger
- 1 whole Avocado
- 1 cup Frozen Shelled Edamame
- 1 whole English Cucumber
- ½ cup Shredded Carrots
- 1 tbsp Sesame Seeds
- 3 whole Green Onions
Instructions
- Cook sushi rice according to package directions. Season with 1 tbsp rice vinegar while warm. Cook edamame according to package directions.
- Make the poke marinade: whisk tamari, sesame oil, remaining rice vinegar, maple syrup, and ginger. Toss tofu cubes in the marinade. Let sit 10 minutes.
- Divide seasoned rice among four bowls. Arrange marinated tofu, avocado, edamame, cucumber, and carrots in sections.
- Drizzle with remaining marinade. Top with sesame seeds and green onions.
