Ingredients

  • 1 block Extra-firm Tofu
  • 2 cups Sushi Rice
  • 3 tbsp Tamari
  • 2 tbsp Sesame Oil
  • 2 tbsp Rice Vinegar
  • 1 tbsp Maple Syrup
  • 1 tsp Fresh Ginger
  • 1 whole Avocado
  • 1 cup Frozen Shelled Edamame
  • 1 whole English Cucumber
  • ½ cup Shredded Carrots
  • 1 tbsp Sesame Seeds
  • 3 whole Green Onions

Instructions

  1. Cook sushi rice according to package directions. Season with 1 tbsp rice vinegar while warm. Cook edamame according to package directions.
  2. Make the poke marinade: whisk tamari, sesame oil, remaining rice vinegar, maple syrup, and ginger. Toss tofu cubes in the marinade. Let sit 10 minutes.
  3. Divide seasoned rice among four bowls. Arrange marinated tofu, avocado, edamame, cucumber, and carrots in sections.
  4. Drizzle with remaining marinade. Top with sesame seeds and green onions.
