Ingredients

  • 1 cup Polenta
  • 1 can (15 oz) Black Beans
  • 1 ½ cups Frozen Corn Kernels
  • 1 whole Avocado
  • 3 cups Vegetable Broth
  • 2 tbsp Nutritional Yeast
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • ½ tsp Chili Powder
  • 1 whole Lime
  • ¼ cup Fresh Cilantro
  • 1 tbsp Olive Oil

Instructions

  1. Bring vegetable broth to a boil. Slowly whisk in polenta. Reduce heat and cook 5–8 minutes, stirring often, until thick and creamy. Stir in nutritional yeast. Season with salt to taste.
  2. Heat a dry skillet over high heat. Add frozen corn and cook 4–5 minutes until charred. Add black beans, smoked paprika, cumin, and chili powder. Stir 2 minutes.
  3. Divide polenta among bowls. Top with the black bean-corn mixture, diced avocado, lime juice, and fresh cilantro.
