Ingredients

  • 1 block Extra-firm Tofu
  • 2 heads Butter Lettuce
  • 2 whole Shallots
  • ½ cup Fresh Mint
  • ½ cup Fresh Cilantro
  • 2 whole Lime
  • 2 tbsp Tamari
  • 1 tbsp Chili Garlic Sauce
  • 1 tsp Maple Syrup
  • 2 tbsp Jasmine Rice
  • 1 tbsp Vegetable Oil
  • 3 whole Green Onions

Instructions

  1. Toast uncooked rice in a dry skillet over medium heat 3–4 minutes, shaking often, until golden and fragrant. Grind in a mortar and pestle or spice grinder into a coarse powder.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add crumbled tofu and cook 5–6 minutes until golden and slightly crispy.
  3. Remove from heat. Toss with lime juice, tamari, chili garlic sauce, and maple syrup.
  4. Add shallots, mint, cilantro, and green onions. Toss gently. Sprinkle with toasted rice powder.
  5. Spoon into butter lettuce cups and serve immediately.
