Ingredients

  • 1 ½ cups Couscous
  • 2 cans (15 oz each) Chickpeas
  • 2 tbsp Za'atar Spice Blend
  • 1 whole English Cucumber
  • 1 cup Cherry Tomatoes
  • ½ cup Pickled Turnip
  • 3 tbsp Tahini
  • 2 tbsp Lemon Juice
  • 1 clove Garlic
  • 2 tbsp Olive Oil
  • ¼ cup Fresh Parsley

Instructions

  1. Preheat oven to 425°F. Toss chickpeas with olive oil and za'atar. Spread on a sheet pan. Roast 22 minutes until crispy.
  2. Prepare couscous according to package directions. Fluff with a fork.
  3. Make the tahini sauce: whisk tahini, lemon juice, garlic, and 3 tbsp water until smooth. Season with salt to taste.
  4. Divide couscous among bowls. Top with za'atar chickpeas, cucumber ribbons, cherry tomatoes, and pickled turnip.
  5. Drizzle with tahini sauce and garnish with parsley.
