
Lentil Coconut Curry Noodles
Red lentils simmered into a thick, creamy coconut curry sauce tossed with rice noodles and spinach. A warming fusion of dal and noodle soup.

- ¾ cup Dry Red Lentils
- 8 oz Rice Noodles
- 1 can (13.5 oz) Full-fat Coconut Milk
- 2 cups Vegetable Broth
- 2 tbsp Red Curry Paste
- 3 cups Baby Spinach
- 1 whole Yellow Onion
- 3 cloves Garlic
- 1 tbsp Fresh Ginger
- 1 whole Lime
- 1 tbsp Coconut Oil
- ¼ cup Fresh Cilantro
Instructions
- Heat coconut oil in a pot over medium heat. Sauté onion 4 minutes. Add garlic, ginger, and curry paste. Stir 1 minute.
- Add red lentils and vegetable broth. Bring to a boil, reduce heat, and simmer 15 minutes until lentils are soft and broken down.
- Stir in coconut milk and spinach. Cook 3 minutes until spinach wilts and sauce is creamy.
- Cook rice noodles according to package directions. Drain.
- Divide noodles among bowls. Ladle the lentil curry over the noodles. Top with lime juice and fresh cilantro.
