  • ¾ cup Dry Red Lentils
  • 8 oz Rice Noodles
  • 1 can (13.5 oz) Full-fat Coconut Milk
  • 2 cups Vegetable Broth
  • 2 tbsp Red Curry Paste
  • 3 cups Baby Spinach
  • 1 whole Yellow Onion
  • 3 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 1 whole Lime
  • 1 tbsp Coconut Oil
  • ¼ cup Fresh Cilantro

Instructions

  1. Heat coconut oil in a pot over medium heat. Sauté onion 4 minutes. Add garlic, ginger, and curry paste. Stir 1 minute.
  2. Add red lentils and vegetable broth. Bring to a boil, reduce heat, and simmer 15 minutes until lentils are soft and broken down.
  3. Stir in coconut milk and spinach. Cook 3 minutes until spinach wilts and sauce is creamy.
  4. Cook rice noodles according to package directions. Drain.
  5. Divide noodles among bowls. Ladle the lentil curry over the noodles. Top with lime juice and fresh cilantro.
