Pad See Ew (Thai Stir-Fried Wide Noodles)

Ingredients

  • 12 oz Wide Rice Noodles
  • ½ block Extra-firm Tofu
  • 3 cups Broccoli
  • 4 cloves Garlic
  • 2 tbsp Soy Sauce
  • 1 tbsp Dark Soy Sauce
  • 1 tbsp Maple Syrup
  • 1 tsp White Vinegar
  • 3 tbsp Vegetable Oil

Instructions

  1. If using dried wide noodles, soak in warm water 20 minutes until pliable. Drain.
  2. Heat 2 tbsp vegetable oil in a wok over high heat. Add tofu strips and cook 3 minutes until golden. Remove.
  3. Add remaining oil. Stir-fry garlic 15 seconds, then add broccoli with 2 tbsp water. Cook 2–3 minutes until bright green.
  4. Add noodles to the wok. Pour soy sauce, dark soy sauce, maple syrup, and white vinegar over the noodles. Toss with tongs 2–3 minutes until noodles are coated and slightly charred.
  5. Return tofu to the wok. Toss once more. Serve immediately.
