Ingredients

  • 2 cans (15 oz each) Butter Beans
  • 1 can (14.5 oz) Crushed Tomatoes
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • ¼ cup Fresh Dill
  • 1 tsp Dried Oregano
  • 1 tsp Sweet Paprika
  • 3 tbsp Olive Oil
  • 1 tbsp Lemon Juice
  • 1 loaf Crusty Bread

Instructions

  1. Preheat oven to 400°F. Heat 2 tbsp olive oil in an oven-safe dish or skillet over medium heat. Sauté onion 5 minutes. Add garlic, oregano, and paprika. Stir 30 seconds.
  2. Add crushed tomatoes and ½ cup water. Simmer 5 minutes.
  3. Gently fold in butter beans. Season with salt to taste. Drizzle with remaining olive oil.
  4. Transfer to oven and bake 20 minutes until sauce is thick and edges are slightly caramelized.
  5. Stir in lemon juice. Top with fresh dill. Serve with crusty bread.
