  • ¾ cup Dry Green Lentils
  • ¾ cup Walnuts
  • 12 whole Flour Tortillas
  • 1 tbsp Soy Sauce
  • 1 tbsp Chili Powder
  • 1 tsp Ground Cumin
  • 1 tsp Smoked Paprika
  • 1 ½ cups Shredded Purple Cabbage
  • 1 whole Avocado
  • ½ cup Salsa
  • ¼ cup Fresh Cilantro
  • 1 whole Lime

Instructions

  1. Cook lentils in salted boiling water 18–20 minutes until tender. Drain well.
  2. In a skillet over medium heat, toast walnuts 2–3 minutes. Add drained lentils, soy sauce, chili powder, cumin, and smoked paprika. Stir 3 minutes, mashing some lentils for texture.
  3. Warm tortillas in a dry skillet. Fill with lentil-walnut meat, cabbage, avocado, salsa, cilantro, and a squeeze of lime.
