
Thai Coconut Sweet Potato Soup
A silky, creamy soup of roasted sweet potato blended with coconut milk, red curry paste, and lime. Velvety, warming, and aromatic.

Ingredients
- 3 whole Sweet Potatoes
- 1 can (13.5 oz) Full-fat Coconut Milk
- 3 cups Vegetable Broth
- 2 tbsp Red Curry Paste
- 1 whole Yellow Onion
- 3 cloves Garlic
- 1 tbsp Fresh Ginger
- 1 whole Lime
- 1 tbsp Coconut Oil
- ¼ cup Roasted Peanuts
- ¼ cup Fresh Cilantro
Instructions
- Heat coconut oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, ginger, and curry paste. Stir 1 minute.
- Add sweet potato cubes and vegetable broth. Bring to a boil, reduce heat, and simmer 15–18 minutes until sweet potatoes are very tender.
- Add coconut milk. Using an immersion blender, blend until completely smooth. Stir in lime juice. Season with salt to taste.
- Serve topped with a swirl of coconut cream (skim from the top of a chilled can), crushed peanuts, and fresh cilantro.
