Thai Coconut Sweet Potato Soup

A silky, creamy soup of roasted sweet potato blended with coconut milk, red curry paste, and lime. Velvety, warming, and aromatic.

Ingredients

  • 3 whole Sweet Potatoes
  • 1 can (13.5 oz) Full-fat Coconut Milk
  • 3 cups Vegetable Broth
  • 2 tbsp Red Curry Paste
  • 1 whole Yellow Onion
  • 3 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 1 whole Lime
  • 1 tbsp Coconut Oil
  • ¼ cup Roasted Peanuts
  • ¼ cup Fresh Cilantro

Instructions

  1. Heat coconut oil in a large pot over medium heat. Sauté onion 4 minutes. Add garlic, ginger, and curry paste. Stir 1 minute.
  2. Add sweet potato cubes and vegetable broth. Bring to a boil, reduce heat, and simmer 15–18 minutes until sweet potatoes are very tender.
  3. Add coconut milk. Using an immersion blender, blend until completely smooth. Stir in lime juice. Season with salt to taste.
  4. Serve topped with a swirl of coconut cream (skim from the top of a chilled can), crushed peanuts, and fresh cilantro.
