
Spicy Black Bean Noodles (Jajangmyeon-Style)
Thick wheat noodles tossed in a savory, slightly sweet black bean-mushroom sauce. Inspired by the popular Korean-Chinese dish.

Ingredients
- 14 oz Thick Wheat Noodles
- 3 tbsp Black Bean Paste
- 8 oz Cremini Mushrooms
- 1 whole Zucchini
- 1 whole Yellow Onion
- 3 cloves Garlic
- 1 tbsp Maple Syrup
- 1 tbsp Cornstarch
- 2 tbsp Vegetable Oil
- 1 tsp Sesame Oil
- ½ whole English Cucumber
Instructions
- Cook noodles according to package directions. Drain and toss with sesame oil.
- Heat vegetable oil in a large skillet over medium-high heat. Sauté onion 3 minutes. Add mushrooms and zucchini, cook 4–5 minutes until softened.
- Add garlic and black bean paste. Stir 2 minutes until paste darkens and becomes fragrant.
- Add ¾ cup water and maple syrup. Simmer 3 minutes. Stir in cornstarch slurry and cook 1 minute until sauce thickens.
- Divide noodles among bowls. Top with the black bean sauce and julienned cucumber.
