Ingredients

  • ¾ cup Dry Green Lentils
  • 2 whole Sweet Potatoes
  • 12 whole Corn Tortillas
  • 1 whole Avocado
  • ½ whole Red Onion
  • 2 whole Lime
  • ¼ cup Fresh Cilantro
  • 1 tbsp Chili Powder
  • 1 tsp Smoked Paprika
  • 1 tsp Ground Cumin
  • 2 tbsp Olive Oil
  • 2 tbsp Red Wine Vinegar

Instructions

  1. Preheat oven to 425°F. Toss sweet potato cubes with 1 tbsp olive oil, half the chili powder, and a pinch of salt. Roast 20 minutes until caramelized.
  2. Cook lentils in salted boiling water 18–20 minutes until tender. Drain and toss with remaining spices and olive oil.
  3. Quick-pickle the red onion in red wine vinegar with a pinch of salt.
  4. Mash avocado with juice of 1 lime for the crema. Season with salt to taste.
  5. Warm tortillas. Fill with lentils, roasted sweet potato, pickled onion, avocado crema, and cilantro. Serve with lime wedges.
