
Cuban Lentil Picadillo
A plant-based take on the Cuban classic — green lentils simmered with olives, raisins, tomatoes, and warm spices over yellow rice. Sweet, savory, and tangy.

Ingredients
- 1 cup Dry Green Lentils
- 2 cups Jasmine Rice
- 1 can (14.5 oz) Diced Tomatoes
- ⅓ cup Pimento-stuffed Green Olives
- ¼ cup Raisins
- 1 whole Yellow Onion
- 4 cloves Garlic
- 2 tsp Ground Cumin
- 1 tsp Dried Oregano
- ½ tsp Ground Turmeric
- 2 tbsp Olive Oil
- 2 cups Vegetable Broth
- ¼ cup Fresh Cilantro
Instructions
- Cook rice with turmeric added to the water according to package directions for yellow rice.
- Heat olive oil in a pot over medium heat. Sauté onion 5 minutes. Add garlic, cumin, and oregano. Stir 30 seconds.
- Add lentils, diced tomatoes, and vegetable broth. Bring to a boil, reduce heat, and simmer 20 minutes until lentils are tender.
- Stir in olives and raisins. Cook 3 more minutes. Season with salt to taste.
- Serve over yellow rice topped with fresh cilantro.
