Vegan Jackfruit Chili with Beans

Thick and hearty jackfruit chili loaded with black beans, kidney beans, and smoky spices that comes together in one pot in 30 minutes.

  • 1 whole Yellow Onion
  • 1 whole Red Bell Pepper
  • 2 cloves Garlic
  • 1 can (15 oz) Canned Young Green Jackfruit In Water
  • 1 can (15 oz) Black Beans
  • 1 can (15 oz) Kidney Beans
  • ¾ cup Frozen Corn
  • 1 can (14.5 oz) Diced Tomatoes
  • 1 can (15 oz) Crushed Tomatoes
  • ¾ cup Vegetable Broth
  • 1 can (15 oz) Canned Diced Green Chiles
  • 1 tbsp Chili Powder
  • 1 ½ tsp Dried Oregano
  • ¾ tsp Ground Cumin
  • ¾ tsp Smoked Paprika
  • 1 tbsp Olive Oil

Instructions

  1. Drain and rinse the black beans. Transfer half of them to a bowl and mash with a fork until mostly smooth. Set aside. Combine all spices in a small bowl.
  2. Heat olive oil in a large pot over medium heat. Add the diced onion and red bell pepper and cook for 5 minutes, stirring often, until softened.
  3. Add the minced garlic and shredded jackfruit. Stir and cook for 2 minutes until fragrant.
  4. Add the whole black beans, mashed black beans, kidney beans, frozen corn, diced tomatoes, crushed tomatoes, vegetable broth, green chiles, and spice mixture. Stir well to combine.
  5. Bring to a simmer and cook uncovered over medium heat for 20 minutes, stirring often, until the chili thickens to a saucy consistency.
  6. Season with salt and pepper to taste. Serve warm.
