
Vegan Jackfruit Chili with Beans
Thick and hearty jackfruit chili loaded with black beans, kidney beans, and smoky spices that comes together in one pot in 30 minutes.

Ingredients
- 1 whole Yellow Onion
- 1 whole Red Bell Pepper
- 2 cloves Garlic
- 1 can (15 oz) Canned Young Green Jackfruit In Water
- 1 can (15 oz) Black Beans
- 1 can (15 oz) Kidney Beans
- ¾ cup Frozen Corn
- 1 can (14.5 oz) Diced Tomatoes
- 1 can (15 oz) Crushed Tomatoes
- ¾ cup Vegetable Broth
- 1 can (15 oz) Canned Diced Green Chiles
- 1 tbsp Chili Powder
- 1 ½ tsp Dried Oregano
- ¾ tsp Ground Cumin
- ¾ tsp Smoked Paprika
- 1 tbsp Olive Oil
Instructions
- Drain and rinse the black beans. Transfer half of them to a bowl and mash with a fork until mostly smooth. Set aside. Combine all spices in a small bowl.
- Heat olive oil in a large pot over medium heat. Add the diced onion and red bell pepper and cook for 5 minutes, stirring often, until softened.
- Add the minced garlic and shredded jackfruit. Stir and cook for 2 minutes until fragrant.
- Add the whole black beans, mashed black beans, kidney beans, frozen corn, diced tomatoes, crushed tomatoes, vegetable broth, green chiles, and spice mixture. Stir well to combine.
- Bring to a simmer and cook uncovered over medium heat for 20 minutes, stirring often, until the chili thickens to a saucy consistency.
- Season with salt and pepper to taste. Serve warm.
