
Vegan Fried Egg
Pan-fried tofu slices mimic fried egg whites, filled with a silky turmeric-coconut yolk sauce for a convincing plant-based breakfast.

Ingredients
- 1 block Firm Tofu
- 1 tbsp Vegan Butter
- ½ can (13.5 oz) Coconut Milk
- 1 tbsp Nutritional Yeast
- 2 tsp Cornstarch
- ½ tsp Ground Turmeric
- ½ tsp Apple Cider Vinegar
Instructions
- Make the yolk sauce: whisk together coconut milk, nutritional yeast, cornstarch, turmeric, and apple cider vinegar in a small saucepan over medium-low heat. Stir constantly for 3 to 4 minutes until the mixture thickens to a pourable, glossy consistency. Remove from heat and set aside.
- Stand the tofu block on its side and cut into 4 thin slices. Use the tip of a knife to trim the corners of each slice into a rough circle shape, or use a round cookie cutter.
- Melt the vegan butter in a large skillet over medium heat. Add the tofu slices in a single layer and fry for 2 to 3 minutes per side, until lightly golden and browned around the edges.
- Transfer the fried tofu slices to plates. Use a small round cookie cutter or a shot glass to press and remove a circle from the center of each slice.
- Spoon the warm yolk sauce into each hole, filling it to the top. Season with salt and pepper to taste and serve immediately.
