
Vegan Feijoada (Brazilian Black Bean Stew)

Ingredients
- 1 whole Red Bell Pepper
- 1 whole Yellow Onion
- 1 ½ tbsp Tomato Paste
- 2 cloves Garlic
- 2 can (15 oz) Black Beans
- 1 ½ cups Vegetable Broth
- 1 tbsp Lime Juice
- 1 Bay Leaf
- ½ tsp Dried Oregano
- ½ tsp Ground Cumin
- ¼ tsp Ground Allspice
- ¼ cup Fresh Cilantro
- 1 cup Brown Rice
Instructions
- Cook the brown rice according to package directions so it is ready when the stew is done.
- Heat a large saucepan over medium heat. Add the chopped bell pepper, onion, tomato paste, and garlic. Cook for 4 minutes, stirring occasionally, adding 1 to 2 tablespoons of water at a time as needed to prevent sticking.
- Stir in the black beans, vegetable broth, lime juice, bay leaf, oregano, cumin, and allspice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until flavors meld.
- Remove and discard the bay leaf. Season with salt and pepper to taste.
- Stir in the fresh cilantro, then serve the stew over the cooked brown rice.
