Vegan Feijoada (Brazilian Black Bean Stew)

  • 1 whole Red Bell Pepper
  • 1 whole Yellow Onion
  • 1 ½ tbsp Tomato Paste
  • 2 cloves Garlic
  • 2 can (15 oz) Black Beans
  • 1 ½ cups Vegetable Broth
  • 1 tbsp Lime Juice
  • 1 Bay Leaf
  • ½ tsp Dried Oregano
  • ½ tsp Ground Cumin
  • ¼ tsp Ground Allspice
  • ¼ cup Fresh Cilantro
  • 1 cup Brown Rice

Instructions

  1. Cook the brown rice according to package directions so it is ready when the stew is done.
  2. Heat a large saucepan over medium heat. Add the chopped bell pepper, onion, tomato paste, and garlic. Cook for 4 minutes, stirring occasionally, adding 1 to 2 tablespoons of water at a time as needed to prevent sticking.
  3. Stir in the black beans, vegetable broth, lime juice, bay leaf, oregano, cumin, and allspice. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until flavors meld.
  4. Remove and discard the bay leaf. Season with salt and pepper to taste.
  5. Stir in the fresh cilantro, then serve the stew over the cooked brown rice.
