Tofu Stir-Fry with Ginger Soy Sauce
Crispy baked tofu and fresh vegetables tossed in a savory ginger-soy sauce, served over brown rice for a satisfying weeknight dinner.
30 min
Ingredients
- 2 block Extra-firm Tofu
- 4 cups Green Beans
- 2 whole Red Bell Pepper
- 4 tbsp Toasted Sesame Oil
- ½ cup Soy Sauce
- 2 tbsp Fresh Ginger
- 4 tbsp Brown Sugar
- 2 tbsp Maple Syrup
- 2 tbsp Cornstarch
- 2 cups Brown Rice
Instructions
- Cook brown rice according to package directions. Meanwhile, press the tofu between two folded towels with a heavy object on top for 10 minutes, then cut into 1-inch cubes.
- Preheat the oven to 400°F. Arrange the tofu cubes on a lightly greased or parchment-lined baking sheet and bake for 20-25 minutes, flipping once halfway through, until golden and firm.
- While the tofu bakes, whisk together the soy sauce, grated ginger, brown sugar, maple syrup, and cornstarch in a small bowl until smooth. Set aside.
- Heat the sesame oil in a large skillet over medium-high heat. Add the green beans and red bell pepper and cook for 5-7 minutes, stirring often, until slightly softened and beginning to color.
- Pour the sauce over the vegetables. Stir well — the sauce will bubble and thicken within 1-2 minutes. Add the baked tofu and toss to coat evenly.
- Cook for 2-3 more minutes, stirring often, until everything is heated through and the vegetables are cooked to your liking. Season with salt and pepper to taste.
- Serve immediately over brown rice.
