Tofu Stir-Fry with Ginger Soy Sauce

Crispy baked tofu and fresh vegetables tossed in a savory ginger-soy sauce, served over brown rice for a satisfying weeknight dinner.

30 min

Ingredients

  • 2 block Extra-firm Tofu
  • 4 cups Green Beans
  • 2 whole Red Bell Pepper
  • 4 tbsp Toasted Sesame Oil
  • ½ cup Soy Sauce
  • 2 tbsp Fresh Ginger
  • 4 tbsp Brown Sugar
  • 2 tbsp Maple Syrup
  • 2 tbsp Cornstarch
  • 2 cups Brown Rice

Instructions

  1. Cook brown rice according to package directions. Meanwhile, press the tofu between two folded towels with a heavy object on top for 10 minutes, then cut into 1-inch cubes.
  2. Preheat the oven to 400°F. Arrange the tofu cubes on a lightly greased or parchment-lined baking sheet and bake for 20-25 minutes, flipping once halfway through, until golden and firm.
  3. While the tofu bakes, whisk together the soy sauce, grated ginger, brown sugar, maple syrup, and cornstarch in a small bowl until smooth. Set aside.
  4. Heat the sesame oil in a large skillet over medium-high heat. Add the green beans and red bell pepper and cook for 5-7 minutes, stirring often, until slightly softened and beginning to color.
  5. Pour the sauce over the vegetables. Stir well — the sauce will bubble and thicken within 1-2 minutes. Add the baked tofu and toss to coat evenly.
  6. Cook for 2-3 more minutes, stirring often, until everything is heated through and the vegetables are cooked to your liking. Season with salt and pepper to taste.
  7. Serve immediately over brown rice.
