  • 10 oz Dry Brown Rice Ramen Noodles
  • 1 ½ cups Napa Cabbage
  • ¾ cup Edamame
  • ¾ cup Broccoli
  • ¾ cup Carrots
  • 1 ½ whole Green Onions
  • 2 ½ tbsp Lime Juice
  • 3 tbsp Soy Sauce
  • 3 tbsp Brown Rice Vinegar
  • ½ tsp Cane Sugar
  • ¼ tsp Crushed Red Pepper
  • ¼ cup Unsalted Roasted Peanuts
  • ¼ cup Fresh Cilantro
  • 1 whole Lime

Instructions

  1. Place the crushed ramen noodles in a large heatproof bowl and cover with boiling water. Let stand for 3 to 5 minutes until tender, then drain well.
  2. In an extra-large bowl, toss together the shredded napa cabbage, edamame, broccoli, shredded carrots, and sliced scallions.
  3. In a small bowl, whisk together the lime juice, soy sauce, brown rice vinegar, cane sugar, and crushed red pepper until the sugar dissolves.
  4. Add the drained noodles to the cabbage mixture, drizzle the dressing over the top, and toss everything together until well combined. Season with salt and pepper to taste.
  5. Divide among bowls and top each serving with chopped peanuts and fresh cilantro. Serve with lime wedges.
