- 10 oz Dry Brown Rice Ramen Noodles
- 1 ½ cups Napa Cabbage
- ¾ cup Edamame
- ¾ cup Broccoli
- ¾ cup Carrots
- 1 ½ whole Green Onions
- 2 ½ tbsp Lime Juice
- 3 tbsp Soy Sauce
- 3 tbsp Brown Rice Vinegar
- ½ tsp Cane Sugar
- ¼ tsp Crushed Red Pepper
- ¼ cup Unsalted Roasted Peanuts
- ¼ cup Fresh Cilantro
- 1 whole Lime
Instructions
- Place the crushed ramen noodles in a large heatproof bowl and cover with boiling water. Let stand for 3 to 5 minutes until tender, then drain well.
- In an extra-large bowl, toss together the shredded napa cabbage, edamame, broccoli, shredded carrots, and sliced scallions.
- In a small bowl, whisk together the lime juice, soy sauce, brown rice vinegar, cane sugar, and crushed red pepper until the sugar dissolves.
- Add the drained noodles to the cabbage mixture, drizzle the dressing over the top, and toss everything together until well combined. Season with salt and pepper to taste.
- Divide among bowls and top each serving with chopped peanuts and fresh cilantro. Serve with lime wedges.
