
Smoky Pulled Jackfruit Sandwiches
Tender young jackfruit slow-simmered in a smoky BBQ sauce until shreddable, piled onto toasted buns with tangy coleslaw. The vegan pulled pork that fools everyone.

- 2 cans (14 oz each) Young Green Jackfruit In Brine
- ¾ cup Bbq Sauce
- 2 tsp Smoked Paprika
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- ½ tsp Chili Powder
- 1 whole Yellow Onion
- ½ cup Vegetable Broth
- 1 tbsp Olive Oil
- 4 whole Hamburger Buns
- 2 cups Coleslaw Mix
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Vegan Mayonnaise
- Salt
Instructions
- Squeeze excess water from jackfruit pieces. Using your hands or two forks, pull apart into shreds, discarding any hard core pieces.
- Heat olive oil in a skillet over medium heat. Sauté onion for 4 minutes. Add shredded jackfruit, smoked paprika, garlic powder, onion powder, and chili powder. Stir for 2 minutes.
- Pour in vegetable broth and BBQ sauce. Stir to combine. Reduce heat to medium-low, cover, and simmer 18–20 minutes, stirring occasionally, until jackfruit is very tender and sauce is thick.
- While jackfruit simmers, make the slaw: toss coleslaw mix with vegan mayo, apple cider vinegar, and a pinch of salt.
- Use a fork to shred the jackfruit further in the pan. Pile onto toasted buns and top with coleslaw.
