Ingredients

  • 2 cans (14 oz each) Young Green Jackfruit In Brine
  • ¾ cup Bbq Sauce
  • 2 tsp Smoked Paprika
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • ½ tsp Chili Powder
  • 1 whole Yellow Onion
  • ½ cup Vegetable Broth
  • 1 tbsp Olive Oil
  • 4 whole Hamburger Buns
  • 2 cups Coleslaw Mix
  • 2 tbsp Apple Cider Vinegar
  • 2 tbsp Vegan Mayonnaise
  • Salt

Instructions

  1. Squeeze excess water from jackfruit pieces. Using your hands or two forks, pull apart into shreds, discarding any hard core pieces.
  2. Heat olive oil in a skillet over medium heat. Sauté onion for 4 minutes. Add shredded jackfruit, smoked paprika, garlic powder, onion powder, and chili powder. Stir for 2 minutes.
  3. Pour in vegetable broth and BBQ sauce. Stir to combine. Reduce heat to medium-low, cover, and simmer 18–20 minutes, stirring occasionally, until jackfruit is very tender and sauce is thick.
  4. While jackfruit simmers, make the slaw: toss coleslaw mix with vegan mayo, apple cider vinegar, and a pinch of salt.
  5. Use a fork to shred the jackfruit further in the pan. Pile onto toasted buns and top with coleslaw.
