
Sesame-Ginger Soba Noodles
Chilled soba noodles tossed in a bright sesame-ginger dressing with crispy baked tofu, crunchy vegetables, and fresh herbs.

- 12 oz Soba Noodles
- ½ block Extra-firm Tofu
- 2 tbsp Tahini
- 2 tbsp Soy Sauce
- 1 tbsp Fresh Ginger
- 2 tbsp Rice Vinegar
- 1 tbsp Sesame Oil
- 1 tbsp Maple Syrup
- 1 whole English Cucumber
- 1 cup Shredded Carrots
- 1 cup Frozen Shelled Edamame
- ¼ cup Fresh Mint
- 1 tbsp Sesame Seeds
Instructions
- Cook soba noodles according to package directions. Drain and rinse under cold water until completely cool.
- Cook edamame according to package directions. Drain.
- Whisk together tahini, soy sauce, grated ginger, rice vinegar, sesame oil, maple syrup, and 2 tbsp water until smooth.
- Heat a dry skillet over medium-high heat. Add tofu cubes and cook 5-6 minutes until golden and crispy on all sides.
- Toss cold noodles with the sesame-ginger dressing. Add cucumber ribbons, shredded carrots, and edamame.
- Top with crispy tofu, fresh mint, and sesame seeds.
