  • 12 oz Soba Noodles
  • ½ block Extra-firm Tofu
  • 2 tbsp Tahini
  • 2 tbsp Soy Sauce
  • 1 tbsp Fresh Ginger
  • 2 tbsp Rice Vinegar
  • 1 tbsp Sesame Oil
  • 1 tbsp Maple Syrup
  • 1 whole English Cucumber
  • 1 cup Shredded Carrots
  • 1 cup Frozen Shelled Edamame
  • ¼ cup Fresh Mint
  • 1 tbsp Sesame Seeds

Instructions

  1. Cook soba noodles according to package directions. Drain and rinse under cold water until completely cool.
  2. Cook edamame according to package directions. Drain.
  3. Whisk together tahini, soy sauce, grated ginger, rice vinegar, sesame oil, maple syrup, and 2 tbsp water until smooth.
  4. Heat a dry skillet over medium-high heat. Add tofu cubes and cook 5-6 minutes until golden and crispy on all sides.
  5. Toss cold noodles with the sesame-ginger dressing. Add cucumber ribbons, shredded carrots, and edamame.
  6. Top with crispy tofu, fresh mint, and sesame seeds.
