Sesame Ginger Tofu with Broccoli

Ingredients

  • 1 block Extra-firm Tofu
  • 4 cups Broccoli
  • 3 tbsp Cornstarch
  • ⅓ cup Tamari
  • 3 tbsp Maple Syrup
  • 2 tbsp Rice Vinegar
  • 1 tbsp Fresh Ginger
  • 3 cloves Garlic
  • 1 tbsp Sesame Oil
  • 2 cups Jasmine Rice
  • 2 tbsp Sesame Seeds

Instructions

  1. Preheat oven to 425°F. Cook jasmine rice according to package directions.
  2. Toss tofu cubes with 2 tbsp cornstarch. Spread on a sheet pan. Bake 22 minutes, flipping halfway, until crispy.
  3. Steam broccoli florets 4 minutes until bright green and tender-crisp.
  4. Whisk tamari, maple syrup, rice vinegar, ginger, garlic, sesame oil, remaining cornstarch, and ¼ cup water in a saucepan. Simmer 2 minutes until thick.
  5. Toss baked tofu and steamed broccoli with the sauce. Serve over rice topped with sesame seeds.
