Quinoa, Apple, and Sweet Potato Wraps

  • 1 whole Sweet Potatoes
  • 2 tbsp Creamy Peanut Butter
  • 1 tbsp Maple Syrup
  • ½ cup Apple Juice
  • ⅛ tsp Ground Cardamom
  • 2 whole Apple
  • 2 cups Quinoa
  • 4 whole Whole Wheat Tortillas
  • 1 cup Baby Spinach

Instructions

  1. Place chopped sweet potato in a medium saucepan and cover with water. Bring to a boil, then reduce heat and simmer uncovered for 8 to 10 minutes until tender. Drain and let cool completely.
  2. In a large bowl, whisk together the peanut butter, maple syrup, apple juice, and ground cardamom until smooth. Season with salt and pepper to taste.
  3. Add the cooled sweet potato, chopped apples, and cooked quinoa to the bowl. Toss until everything is evenly coated in the dressing.
  4. Lay out the whole wheat tortillas and spoon the quinoa mixture evenly down the center of each. Top with baby spinach, then roll up tightly. Slice in half and serve.
