  • 1 ½ cups Dry Red Lentils
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 1 ½ tsp Ground Cumin
  • 1 tsp Ground Turmeric
  • 1 tsp Garam Masala
  • 1 can (14.5 oz) Diced Tomatoes
  • 4 cups Vegetable Broth
  • 2 tbsp Coconut Oil
  • 2 cups Basmati Rice
  • ¼ cup Fresh Cilantro

Instructions

  1. Cook basmati rice according to package directions.
  2. Heat coconut oil in a large pot over medium heat. Sauté onion 4 minutes until softened.
  3. Add garlic, ginger, cumin, turmeric, and garam masala. Stir 1 minute.
  4. Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer 18 minutes until lentils break down and thicken.
  5. Season with salt to taste. Serve over basmati rice topped with fresh cilantro.
