Quick and Easy Seitan Vegan Chicken Bites

Crispy pan-fried seitan bites coated in a sticky sweet chili hoisin glaze, ready in just 20 minutes with only a handful of pantry ingredients.

  • ¾ cup Vital Wheat Gluten
  • ¼ cup All-purpose Flour
  • 1 tsp Vegetable Broth Powder
  • ½ tsp Onion Powder
  • ½ tsp Garlic Powder
  • 3 tbsp Thai Sweet Chili Sauce
  • 3 tbsp Hoisin Sauce
  • 2 tbsp Soy Sauce
  • 1 tbsp Rice Vinegar
  • ½ tsp Sesame Oil
  • 2 tbsp Canola Oil
  • 1 tbsp Sesame Seeds
  • ¼ cup Green Onions

Instructions

  1. Add about an inch of water to a pot fitted with a steamer basket and bring to a light boil. Lightly grease the steamer basket.
  2. In a medium bowl, whisk together the vital wheat gluten, all-purpose flour, vegetable broth powder, onion powder, and garlic powder. Season with salt and pepper to taste. Pour in 2/3 cup water and mix until a ball of dough forms.
  3. Tear the dough into bite-sized pieces and arrange them in a single layer in the steamer basket. Cover and steam for 10 minutes.
  4. While the seitan steams, whisk together the Thai sweet chili sauce, hoisin sauce, soy sauce, 2 tablespoons water, rice vinegar, and sesame oil in a small bowl. Set aside.
  5. Heat the canola oil in a large skillet over medium-high heat. Using tongs, transfer the steamed seitan bites to the hot oil — be careful as it may splatter. Cook for 2 to 3 minutes per side until golden brown and crispy.
  6. Remove the skillet from the heat, pour the sauce over the seitan bites, and toss to coat evenly. Top with sesame seeds and chopped green onions and serve hot.
