Moroccan Spiced Red Lentil Soup

Ingredients

  • 1 ½ cups Dry Red Lentils
  • 1 can (14.5 oz) Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 whole Yellow Onion
  • 4 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 2 tsp Ground Cumin
  • ½ tsp Ground Cinnamon
  • 1 tsp Sweet Paprika
  • ½ tsp Ground Turmeric
  • 2 tbsp Olive Oil
  • 1 whole Lemon
  • ¼ cup Fresh Cilantro
  • Salt

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until softened.
  2. Add garlic, ginger, cumin, cinnamon, paprika, and turmeric. Stir for 1 minute until very fragrant.
  3. Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer 20 minutes, stirring occasionally, until lentils are completely broken down.
  4. For a smoother soup, use an immersion blender to partially blend (leave some texture). Or serve as-is for a chunkier version.
  5. Stir in lemon juice and season with salt. Serve topped with fresh cilantro and a drizzle of olive oil.
