
Moroccan Spiced Red Lentil Soup
A velvety, warmly spiced lentil soup with cumin, cinnamon, and a squeeze of lemon. Simple, nourishing, and deeply satisfying on a cold evening.

Ingredients
- 1 ½ cups Dry Red Lentils
- 1 can (14.5 oz) Diced Tomatoes
- 4 cups Vegetable Broth
- 1 whole Yellow Onion
- 4 cloves Garlic
- 1 tbsp Fresh Ginger
- 2 tsp Ground Cumin
- ½ tsp Ground Cinnamon
- 1 tsp Sweet Paprika
- ½ tsp Ground Turmeric
- 2 tbsp Olive Oil
- 1 whole Lemon
- ¼ cup Fresh Cilantro
- Salt
Instructions
- Heat olive oil in a large pot over medium heat. Sauté onion for 5 minutes until softened.
- Add garlic, ginger, cumin, cinnamon, paprika, and turmeric. Stir for 1 minute until very fragrant.
- Add red lentils, diced tomatoes, and vegetable broth. Bring to a boil, then reduce heat and simmer 20 minutes, stirring occasionally, until lentils are completely broken down.
- For a smoother soup, use an immersion blender to partially blend (leave some texture). Or serve as-is for a chunkier version.
- Stir in lemon juice and season with salt. Serve topped with fresh cilantro and a drizzle of olive oil.
