Homemade BBQ Veggie Pizza

  • 2 ¼ tsp Active Dry Yeast
  • 1 tbsp Organic Sugar
  • 2 tbsp Olive Oil
  • 2 ½ cups All-purpose Flour
  • ⅓ cup Vegan Bbq Sauce
  • 1 whole Red Bell Pepper
  • 1 whole Red Onion
  • ½ block Extra-firm Tofu
  • 2 whole Vegan Chipotle Sausage
  • ½ cup Frozen Corn
  • 2 tbsp Nutritional Yeast
  • 1 tsp Smoked Paprika

Instructions

  1. Preheat the oven to 500°F and arrange a rack in the bottom third of the oven. Grease a large baking sheet with olive oil.
  2. Combine 1 cup warm water (about 105°F) with the sugar in a medium bowl. Sprinkle in the yeast, stir lightly, and let sit for 5 minutes until foamy.
  3. In a large bowl, mix the flour and smoked paprika. Pour in the yeast mixture and olive oil and stir until a dough forms. Knead by hand for 3-4 minutes until smooth and elastic, adding flour a tablespoon at a time if the dough is too sticky. Season with salt and pepper to taste.
  4. Divide the dough in half. On a lightly floured surface, press or roll each portion into a roughly 12-inch round. Transfer to the prepared baking sheet.
  5. Spread BBQ sauce evenly over each crust. Top with red bell pepper, red onion, crumbled tofu, chipotle sausage slices, and corn. Sprinkle nutritional yeast over the top.
  6. Bake for 12-15 minutes, until the crust edges are golden and toppings are slightly charred. Cool for 2 minutes, then slice and serve.
