
Filipino Adobo Mushrooms over Rice
Meaty king oyster mushrooms braised in a tangy, garlicky soy-vinegar adobo sauce until glossy and caramelized. A vegan take on a Filipino classic.

Ingredients
- 1 lb King Oyster Mushrooms
- ⅓ cup Soy Sauce
- ¼ cup White Vinegar
- 8 cloves Garlic
- 3 whole Bay Leaves
- 1 tsp Whole Black Peppercorns
- 1 tbsp Brown Sugar
- ½ cup Vegetable Broth
- 2 tbsp Vegetable Oil
- 2 cups Jasmine Rice
- 3 whole Green Onions
Instructions
- Cook jasmine rice according to package directions.
- Heat vegetable oil in a large skillet over medium-high heat. Sear mushroom rounds 2–3 minutes per side until deeply golden. Remove and set aside.
- In the same skillet, combine soy sauce, vinegar, vegetable broth, smashed garlic, bay leaves, peppercorns, and brown sugar. Bring to a simmer.
- Return mushrooms to the skillet. Reduce heat to medium-low, cover, and braise 12–15 minutes, turning once, until mushrooms are tender and sauce has reduced by half.
- Remove bay leaves. Serve mushrooms and sauce over jasmine rice, topped with sliced green onions.
