Ethiopian Misir Wot (Red Lentil Stew)

A deeply spiced Ethiopian red lentil stew simmered with berbere-style seasonings until thick and velvety. Rich, warming, and naturally protein-packed.

  • 1 ½ cups Dry Red Lentils
  • 2 medium Yellow Onion
  • 3 tbsp Tomato Paste
  • 4 cloves Garlic
  • 1 tbsp Fresh Ginger
  • 2 tbsp Sweet Paprika
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • ¼ tsp Ground Cinnamon
  • ½ tsp Cayenne Pepper
  • 3 cups Vegetable Broth
  • 2 tbsp Olive Oil
  • 2 cups Jasmine Rice

Instructions

  1. Cook jasmine rice according to package directions.
  2. Heat olive oil in a large pot over medium heat. Add onions and cook 8–10 minutes, stirring often, until deeply softened and caramelized.
  3. Add garlic, ginger, paprika, cumin, coriander, cinnamon, and cayenne. Stir for 1 minute until very fragrant.
  4. Stir in tomato paste and cook 1 minute.
  5. Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer 18–20 minutes, stirring occasionally, until lentils are completely broken down and stew is thick.
  6. Season with salt to taste. Serve over jasmine rice.
