
Ethiopian Misir Wot (Red Lentil Stew)
A deeply spiced Ethiopian red lentil stew simmered with berbere-style seasonings until thick and velvety. Rich, warming, and naturally protein-packed.

Ingredients
- 1 ½ cups Dry Red Lentils
- 2 medium Yellow Onion
- 3 tbsp Tomato Paste
- 4 cloves Garlic
- 1 tbsp Fresh Ginger
- 2 tbsp Sweet Paprika
- 1 tsp Ground Cumin
- 1 tsp Ground Coriander
- ¼ tsp Ground Cinnamon
- ½ tsp Cayenne Pepper
- 3 cups Vegetable Broth
- 2 tbsp Olive Oil
- 2 cups Jasmine Rice
Instructions
- Cook jasmine rice according to package directions.
- Heat olive oil in a large pot over medium heat. Add onions and cook 8–10 minutes, stirring often, until deeply softened and caramelized.
- Add garlic, ginger, paprika, cumin, coriander, cinnamon, and cayenne. Stir for 1 minute until very fragrant.
- Stir in tomato paste and cook 1 minute.
- Add red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer 18–20 minutes, stirring occasionally, until lentils are completely broken down and stew is thick.
- Season with salt to taste. Serve over jasmine rice.
