Easy Vegetable Rice Pilaf

A simple stovetop rice pilaf toasted in vegan butter with garlic, carrots, zucchini, and fresh herbs, ready in 30 minutes.

  • 2 tbsp Vegan Butter
  • 1 whole Yellow Onion
  • 1 cup White Rice
  • 4 cloves Garlic
  • ½ cup Carrots
  • ½ tsp Dried Sage
  • ½ tsp Dried Thyme
  • ½ tsp Dried Rosemary
  • 1 ¾ cups Vegetable Broth
  • 2 whole Zucchini
  • 2 tbsp Fresh Lemon Juice
  • ¼ cup Fresh Parsley

Instructions

  1. Melt the vegan butter in a large skillet over medium-low heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the rice, garlic, shredded carrots, sage, thyme, and rosemary. Stir frequently and cook until the rice is lightly toasted, about 3 minutes.
  3. Pour in the hot vegetable broth and stir to combine. Increase heat to medium and bring to a boil, then reduce to low. Cover and simmer for 10 minutes.
  4. Add the zucchini pieces, stir gently to incorporate, cover, and cook on low for 5 more minutes.
  5. Remove from heat and let sit, covered, for 5 minutes to allow the rice to finish steaming.
  6. Uncover and fluff the rice with a fork. Stir in the lemon juice and parsley. Season with salt and pepper to taste, then serve warm.
