
Easy Vegetable Rice Pilaf
A simple stovetop rice pilaf toasted in vegan butter with garlic, carrots, zucchini, and fresh herbs, ready in 30 minutes.

Ingredients
- 2 tbsp Vegan Butter
- 1 whole Yellow Onion
- 1 cup White Rice
- 4 cloves Garlic
- ½ cup Carrots
- ½ tsp Dried Sage
- ½ tsp Dried Thyme
- ½ tsp Dried Rosemary
- 1 ¾ cups Vegetable Broth
- 2 whole Zucchini
- 2 tbsp Fresh Lemon Juice
- ¼ cup Fresh Parsley
Instructions
- Melt the vegan butter in a large skillet over medium-low heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the rice, garlic, shredded carrots, sage, thyme, and rosemary. Stir frequently and cook until the rice is lightly toasted, about 3 minutes.
- Pour in the hot vegetable broth and stir to combine. Increase heat to medium and bring to a boil, then reduce to low. Cover and simmer for 10 minutes.
- Add the zucchini pieces, stir gently to incorporate, cover, and cook on low for 5 more minutes.
- Remove from heat and let sit, covered, for 5 minutes to allow the rice to finish steaming.
- Uncover and fluff the rice with a fork. Stir in the lemon juice and parsley. Season with salt and pepper to taste, then serve warm.
