Easy Protein Pancakes
Fluffy oat-and-banana protein pancakes blended in seconds and cooked on a skillet for a quick, satisfying vegan breakfast.
22 min
Ingredients
- ½ cup Rolled Oats
- ½ whole Banana
- ½ cup Unsweetened Plant-based Milk
- ½ cup Vegan Vanilla Protein Powder
- 1 ½ tsp Maple Syrup
- 1 ½ tsp Canola Oil
- ½ tsp Baking Powder
- ½ tsp Apple Cider Vinegar
- ½ tsp Vanilla Extract
- ¼ tsp Ground Cinnamon
Instructions
- Add rolled oats, banana, plant-based milk, protein powder, maple syrup, canola oil, baking powder, apple cider vinegar, vanilla extract, and cinnamon to a blender. Blend until smooth, scraping down the sides as needed.
- Let the batter rest for 2 to 3 minutes so the oats can absorb the liquid and the batter thickens slightly. It will be thicker than traditional pancake batter — that is normal.
- Heat a nonstick skillet over medium heat and lightly grease with a small amount of canola oil. Pour ¼ cup of batter per pancake and gently spread to about 4 inches wide.
- Cook for 2 to 3 minutes until the edges look set and small bubbles appear on the surface. Flip and cook for another 1 to 2 minutes until golden. Season with a pinch of salt to taste if desired. Repeat with remaining batter.
- Serve warm with maple syrup, fresh berries, or nut butter.
