
Easy Peanut Butter Balls
No-bake peanut butter balls with chocolate chips and an optional chocolate coating, ready in minutes with just a few pantry staples.

Ingredients
- ¼ cup Peanut Butter
- 1 tbsp Maple Syrup
- ¼ tsp Vanilla Extract
- 2 ¾ tbsp Oat Flour
- ¼ cup Vegan Chocolate Chips
- ¼ tsp Coconut Oil
Instructions
- In a medium bowl, stir together the peanut butter, maple syrup, and vanilla extract until smooth.
- Add the oat flour and mix to form a soft dough. If the dough is sticky, add more oat flour 1 tablespoon at a time until it holds together. If it is too dry, add a little more peanut butter or maple syrup. Season with a pinch of salt to taste, then fold in half of the chocolate chips.
- Scoop about 1 tablespoon of dough at a time and roll into smooth balls. You should get about 4 to 5 balls per serving.
- In a microwave-safe bowl, combine the remaining chocolate chips and coconut oil. Microwave in 20-second bursts, stirring between each, until fully melted and smooth.
- Dip or drizzle the melted chocolate over the balls and place on a parchment-lined plate. Sprinkle lightly with flaky salt before the chocolate sets.
- Refrigerate for 10 to 15 minutes until firm. Store in an airtight container in the fridge for up to 1 week.
