Easy Peanut Butter Balls

No-bake peanut butter balls with chocolate chips and an optional chocolate coating, ready in minutes with just a few pantry staples.

  • ¼ cup Peanut Butter
  • 1 tbsp Maple Syrup
  • ¼ tsp Vanilla Extract
  • 2 ¾ tbsp Oat Flour
  • ¼ cup Vegan Chocolate Chips
  • ¼ tsp Coconut Oil

Instructions

  1. In a medium bowl, stir together the peanut butter, maple syrup, and vanilla extract until smooth.
  2. Add the oat flour and mix to form a soft dough. If the dough is sticky, add more oat flour 1 tablespoon at a time until it holds together. If it is too dry, add a little more peanut butter or maple syrup. Season with a pinch of salt to taste, then fold in half of the chocolate chips.
  3. Scoop about 1 tablespoon of dough at a time and roll into smooth balls. You should get about 4 to 5 balls per serving.
  4. In a microwave-safe bowl, combine the remaining chocolate chips and coconut oil. Microwave in 20-second bursts, stirring between each, until fully melted and smooth.
  5. Dip or drizzle the melted chocolate over the balls and place on a parchment-lined plate. Sprinkle lightly with flaky salt before the chocolate sets.
  6. Refrigerate for 10 to 15 minutes until firm. Store in an airtight container in the fridge for up to 1 week.
